Hoppin John
Yield: 8 servings
- 1 lb dried black eye peas
- 1 tbsp olive oil
- 1 cup onion, diced
- 2 garlic cloves, minced
- 1/2 tsp red pepper flakes
- 1 1/4 cup long grain white rice
- 4 cups chicken stock
- 2 cups of water
- 12 oz. fully cooked smoked sausage cut into a 1/2-inch pieces
- 1 bay leaf
- 1 tsp thyme
- 1/8 tsp ground cloves
- 1 tbsp salt
- 1 tbsp pepper
- 1 cup green pepper,diced
- 1 cup celery,diced
Notes: Make on New Year's Eve to eat before noon on New Year's Day. For good luck.
Preparation: Dice onion, pepper and celery. Mince garlic, cut up sausage.
Directions:
- Put black eyed peas in a large pot and cover with about 2 inches of water. Bring to a boil. Reduce heat and simmer for 1/2 hour. Drain.
- Heat olive oil in a 6 quart pot over medium heat. Stir in onions, peppers, celery, garlic and pepper flakes. Cook for about 5 minutes until onions are translucent.
- Add the rice and stir until coated with oil and translucent.
- Add chicken stock, sausage and black eyed peas. Bring to a boil.
- Add bay leaf, thyme, cloves, salt and pepper. Reduce heat and cover.
- Simmer for about 20 minutes until rice is cooked and liquid is absorbed.
- Serve.
