Hoppin John

Yield: 8 servings

Notes: Make on New Year's Eve to eat before noon on New Year's Day. For good luck.

Preparation: Dice onion, pepper and celery. Mince garlic, cut up sausage.

Directions:

  1. Put black eyed peas in a large pot and cover with about 2 inches of water. Bring to a boil. Reduce heat and simmer for 1/2 hour. Drain.
  2. Heat olive oil in a 6 quart pot over medium heat. Stir in onions, peppers, celery, garlic and pepper flakes. Cook for about 5 minutes until onions are translucent.
  3. Add the rice and stir until coated with oil and translucent.
  4. Add chicken stock, sausage and black eyed peas. Bring to a boil.
  5. Add bay leaf, thyme, cloves, salt and pepper. Reduce heat and cover.
  6. Simmer for about 20 minutes until rice is cooked and liquid is absorbed.
  7. Serve.
