Lemon Squares

Yield: 12 servings

Preparation: Squeeze lemon, grate zest. Beat eggs. Pre-heat oven to 300 degrees.

Directions:

  1. Sift 2 cups of flour and powdered sugar together. Cut in butter until well blended.
  2. Press mixture over bottom of a 9x13 by 2-inch pan.
  3. Bake about 25 minutes at 300 degrees until lightly browned.
  4. Combine remaining ingredients and spread on top of the baked crust.
  5. Bake at 350 degrees for 25 to 30 minutes. Sprinkle with powdered sugar.
