Bow Tie Pasta with Prosciutto and Peas
Yield: 4 to 6 Servings
- 2 tsp olive oil
- 1 onion, large
- 1 bag frozen peas (10 to 16 oz.)
- 1/2 cup water
- 1 lb bow tie pasta (farfalle)
- 2 oz. prosciutto
- 2 tbsp parsley
- 3/4 cup Parmesan cheese
Preparation: Cook pasta according to package directions and set aside. Thinly slice onion and mince prosciutto.
Directions:
- Saute prosciutto in olive oil for about a minute.
- Add onion. Saute until onions are transulent.
- Add peas, 1/2 cup water, and salt and pepper. Cook, stirring occasionally, until peas are thawed - about 5 minutes.
- Add pasta to pan and heat through.
- Top with Parmesan cheese and parsley.
