Meatballs
Yield: 6 Servings
- spaghetti sauce
- 2-3 lbs ground beef
- 2-3 eggs
- garlic or garlic powder
- bread crumbs
- salt
Notes: I just eyeball this recipe. Use 1 egg per pound of ground beef. If using fresh garlic, mince it finely.
Directions:
- Heat spaghetti sauce. If using the recipe in this cookbook, start making the meatballs after the sauce has been simmering for a half hour to an hour. Turn the stove down to low. The sauce should be hot enough for the meatballs to start setting immediately but not so hot it has to be stirred constantly at first.
- In a large bowl, add the ground beef, eggs, garlic powder and salt. Add some breadcrumbs to the mixture and mix it all together with your hands.
- Form meatballs by rolling the mixture in your hands.
- Drop meatballs into the sauce as evenly as you can.
- Cook meatballs in the sauce for at least an hour or so. Stir the sauce/meatballs very gently at first to keep the meatballs from becoming meat sauce. If using the spaghetti sauce recipe in this cookbook, continue simmering the sauce until it reaches the desired consistency.
- Serve.
