Granola

Yield: 12 Cups

Notes: You can use sliced almonds or chopped walnuts. For the dried fruit, you can use raisins, craisins or some other dried fruit.

Preparation: Adjust oven rack to upper-middle position and heat oven to 325 degrees. Line rimmed baking sheet with foil or parchment paper.

Directions:

  1. Whisk together maple syrup, brown sugar, vanilla, and salt in a large bowl. Whisk in oil. Fold in oats and nuts until thoroughly coated.
  2. Transfer oat mixture to prepared baking sheet and spread into a thin even layer. Using a stiff metal spatula (or another baking sheet) compress oat mixture until very compact.
  3. Bake until lightly browned, 40 to 45 minutes, rotating pan once halfway through baking.
  4. Remove granola from oven and cool on wire rack to room temperature, about an hour.
  5. Break granola into pieces of desired size. Stir in dried fruit.
  6. Store in a air-tight container.
