Spinach & Goat Cheese Salad
Yield: 4 to 6 Servings
- 8 oz. spinach
- 1/2 cup Feta or Goat cheese
- 1/4 small red onion
- 1/2 cup Craisins
- 2 tbsp nuts
- 1/2 cup balsamic vinaigrette
- 2 tbsp orange juice
- 1 tsp orange zest
Notes: Does not keep well. Make just enough for one sitting.
Preparation: Wash and dry spinach if necessary. Chop onion, crumble cheese, zest orange.
Directions:
- Mix all the ingredients together.
- Serve.
